Vinification :
For Nicolas Bourdil, Rosé des Fontenelles is definitely the most technical wine in terms of vinification and vintage date. The cellar master's decisions are very important in order to combine fruit, freshness and colour.
The rosé is made from "bleeding" vats of Merlot and Cabernet destined for red wine. After about ten hours of maceration of the juice in contact with the grape skins, when the desired colour is achieved, the juice is run off then vinified separately so the fruity aromas and delicate pink colour are preserved. With very hot vintages, Nicolas sometimes presses part of his rosé directly to limit the colour extraction.
Tasting note :
Beautiful intense raspberry colour, a fresh bouquet that offers flattering notes of red fruits (pomegranate, strawberry, raspberry), pleasant liveliness and a palate reminscent of fruit candy.
Pairing suggestions : Enjoy at 10 ° C paired with grilled meats, mixed salads, grilled prawns and spicy poultry.
